What is Ghanaian chocolate couverture? Ghanaian chocolate is made with cocoa grown in Ghana's forest belt, which runs through the Ashanti, Bono, Western, Eastern and Central regions. Ghana grows Forastero, the hardy variety behind most of the world's chocolate, and it gives a deep, straightforward cocoa character with very little of the acidity or red fruit you meet in South American beans. That steadiness is what makes Ghanaian cocoa such a dependable base for milk chocolate.

Ghana also controls what leaves the country unusually closely. COCOBOD's Quality Control Company samples, grades and seals cocoa before it is exported, working across 73 operational districts in six cocoa-growing regions. Much of Ghanaian cocoa's reputation for consistency comes from that system, and it is the reason a Ghanaian couverture tends to behave the same way batch after batch.
